If you are wondering what kind of coffee you might enjoy most, here are some descriptions of the beans along with some of my personal suggestions on when and where to enjoy the coffee.

Our minimum standard is fairly traded, and almost all our coffees are organic or natural.  Coffees that we offer which are not certified as Fair Trade are from farms that may not be able to afford certification but that we feel meet or more often exceed ‘Fair Trade’ standards.   


Standard Offerings - Single Origin Coffees   

Guatemala Huehuetenango – Direct Trade & Non-cert Organic
This coffee is sweet with hints of roasted nuts.  It’s a classic coffee that’s well-balanced and versatile with good body.  It’s a perfect ‘everyday-er’ to add some goodness to your routine.
These beans were purchased by the distributor at ‘Direct Trade’ prices which are above and beyond the Fair Trade going rate.  They are from a small farm near Huehuetenango and although they cannot afford to pay for Organic certification the coffee is grown by strictly natural means. 

Mexican High Grown Chiapas – Fair Trade Organic
If you are fan of Mexican Chocolate then this is coffee for you.  It has hints of fruit and chocolate and a slight acidity and it’s bold yet smooth.  I'd pair this with a chocolate pastry.

Peru – Fair Trade Organic
The best way for me to describe this is to say it’s a balanced cup and it has a great aroma.  The cup has woody hints and a smooth aftertaste. This is a cup that goes well with a slow Saturday conversation with my wife over homemade waffles and maple syrup.

Sumatra
Mandheling – Fair Trade Organic
What to say about the Mandheling.  In my opinion, it’s the most distinct of the well-known beans.  It is thick bodied with sweet and spicy earthy notes. It makes an excellent evening cup.  Learn about the Co-op here.

Brazil Moreninha
Formosa
This Brazil is sweet and very smooth with excellent body, and a bit of fruitiness.  This would be a great choice for espresso.  It’s is a dry processed bean.  This coffee comes from the city of Serra do Salitre. 



                                       Custom Blends 
 
Rosemont Crest Blend
This is a crowd-pleaser and one of my favorites.  It is blended precisely for good body, a hint of sweetness balanced by bit of boldness and with a lingering aftertaste.  It’s a medium roast, so you can savor the taste of the coffee without being overpowered by the roast flavors.  It’s our house blend, and so it’s named after our little known neighborhood in Oak Cliff which happens to be a National Historic District.  


Hidden City Blend

This blend is crafted specifically for espresso.  It’s smooth with high notes of sweet berries, and it maintains the body needed for espresso shots.  It’s roasted medium-dark to bring out hints of chocolate, but without the pungency of darker roasts.  And this blend makes a great cup of brewed coffee as well, so don’t be scared to give it a chance in your coffee pot.  

 

Victor Prosper’s Roast

We’re very cautious about dark roasts.  Many dark or ultra-dark roasts I’ve tasted at coffee shops and grocery stores are nothing more than burnt coffee with hints of carbon and charcoal.  We buy high quality coffee beans and we want you to be able to taste them.  So we carefully roast this blend dark.  It has the sweet pungency that people love in dark roasts, without roasting away the entire flavor of the coffee itself.  It’s our version of the ‘French Roast’, so it’s named after the Frenchman who settled the La Reunion Colony in Oak Cliff in the 19th Century.

 

 

Special Offerings 

Mexican MWP Decaf - Fair Trade Organic
This is our first decaf offering. I've been slow to offer one due to the fact that I typically don't like decafs, but this is a decaf that I enjoy.  It is Mountain Water processed, which in my opinion, produces a better flavor than Swiss Water processing while still avoiding the use of decaffeinating chemicals.  It's not your typical Mexican bean as it has unusual hints of fruit and a lighter body.
